Randy's Tamari Steaks
This recipe is a favorite on the boat. We make this for dinner almost everynight when fishing. It's easy and the salmon tastes very rich, deeply moist, much like meaty shark steaks. Randy is a firm believer in cooking with cast iron. So this recipe is best, cooked in a well seasoned cast iron skillet.
Alaska King Salmon Steaks (one steak per serving)
Olive Oil
Tamari (soy sauce is ok, but tamari is truly the best)
Your favorite Seasoning blend such as Mrs. Dash, or Steak Seasoning or just
Salt & Pepper
Put olive oil in pan and heat til pan is searing hot. Sear steaks in pan until lightly golden. Season the side facing up with your favorite steak seasonings. When salmon is cooked half way through, flip over to cook the seasoned side. Turn stove down to low and sprinkle tamari and olive oil on steaks and cover with a lid to steam. Cast iron well stay hot for awhile to finish cooking the salmon even when stove is turned down. You will need to make adjustments if you are not using cast iron. The steam and oil allows the tamari to soak into the steak instead of burning to the pan. The searing of one side seals in the moisture and flavor. When second side is done (soft to the touch, do not overcook) remove from heat. Serve with veggies.
